
Can anyone tell me the recipe for cooking chicken Achari?
I am fond of Indian cuisine. They cook delicious food. I've heard of Chicken Achari, pickeling a kind of chicken. That would be great if someone can give me a prescription for it or tell me where to find it.
Indian Cooking Recipes Achari Chicken Makes: 4 Ingredients: • 8 medium sized pieces (about 800 grams) chicken • ½ tsp each of fenugreek seeds (methi), cumin seeds and turmeric powder • 2 tablespoons each of ginger and garlic paste • 1 teaspoon mustard, fennel (saunf) and onion seeds (kalonji) • 1 tsp red chili powder • 2 large onions, diced • 1 cup tomato sauce • 1 cup chopped tomato • 1 tablespoon lemon juice • ½ cup water • 2 tbsp vegetable oil • salt to taste • Coriander leaves finely for garnish Procedure: 1. Heat oil and add mustard, fennel, fenugreek, cumin, onion seeds and fry for a few seconds. 2. Add the onions and fry them in the highest level in a few seconds until the onion is well are covered in oil and crispy (or fried or soft). Transfer to a bowl, leaving oil in pan. 3. To the same pan, add the garlic paste, ginger, turmeric, red chili powder and saute for a few seconds. 4. Add chicken pieces and fry on high for about 2 minutes or until chicken is a little white on color. 5. Cover and cook on low for about 20 minutes or until water evaporates, oil separates from the sides of the pan and chicken is cooked through. 6. Add tomato sauce, diced tomatoes and fried in the highest level within seconds. 7. Now add the fried onion mixture and sprinkle salt to taste. 8. Mix well. Sauté in the level highest in about 2 minutes. Add the lemon juice. Garnish with finely chopped coriander leaves.
