What are the main ingredients used in different ethnic foods? What options are these foods safe for peanut?

I'm allergic to peanuts and therefore have never been properly exposed to ethnic foods (South America, Indian, Japanese, Chinese, Russian, Thai, Middle East). I am now doing research on what are the main ingredients used in different foods and what are the most easy peanut? For example, I know Thailand has a lot of peanuts, but Mexico is quite safe. Please provide as much information as possible.

Indian food can be complicated, the Maharashtra state food containing peanuts, but other regions can use other nuts (pistachios, cashews, Almonds are the most popular). In many Punjabi / Mughlai dishes, nuts are ground into a paste and used to thicken curries and sauces. Peanut oil also can be used for frying. Many of the deserts of India also contain nuts. Then it would consider Indian food at home, which is taken can know with certainty. But I encourage you to try Indian food, since not everything that contains nuts! But let the waiter know your allergy and will recommend that the dishes the order.
